Healthy Breakfast Recipes

Cindy's Egg White Omelet

4 egg whites
2 tbsp of almond milk
6 cherry tomatoes
1 clove garlic
1 handful of spring mix
1 tbsp of purple onion
1/2 tsp of fresh ground pepper
Cooking spray


1. Beat eggs with almond milk and black pepper

2. Sautée vegetables lightly until soft

3. Pour eggs into small skillet coated with cooking spray. Cook until firm and add vegetables. Fold in half and enjoy.

4. Optional add in mozzarella cheese

Cindy's Protein Pancakes

6 egg whites- beaten until fluffy
1 tbsp of almond milk
1/2 cup of Greek yogurt
1 scoop whey protein powder
1/3 cup of flax seed- milled
1 tbsp of olive oil
1/2 tsp of sea salt
1 tsp baking powder
1/2 tsp cinnamon
1/3 tsp nutmeg
Cooking spray

1. Place all ingredients except beaten egg whites in a food processor and pulse or blend until mixture is even

2. Pour blended ingredients into a bowl and add the egg whites. Mix together

3. Prepare a griddle with cooking spray. Spoon pancake mixture onto griddle and cook until both sides are lightly browned

4. Top with fresh sliced strawberries, blueberries, or honey
