Chocolate -Peanut Butter- Banana Ice Cream

1 1/2 peeled medium bananas, sliced into coins and frozen until solid
3 tablespoons natural peanut butter
2 teaspoons honey
2 Tbsp dark cocoa powder
1 tbsp of chocolate protein powder
1 tbsp of almond milk
1/2 tbsp vanilla extract


Blend bananas in food processor until they are the consistency of soft serve ice cream. Blend in peanut butter, dark cocoa powder, almond milk, vanilla extract, and honey. Transfer to a freezer container and freeze until solid.

Healthy Chicken Flat Bread Pizza


4 whole grain flat bread (you can use thin pita bread)
1 1/2 cups of sliced grilled chicken
1/2 cup sun-dried tomato packed in oil, coarsely chopped
6 leaves fresh basil, coarsely chopped
3 cups grated mozzarella cheese
1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon red pepper flakes


1. Per heat oven to 375. Mix all the ingredients together (except the bread) in a bowl. Use your hands. It's easier.

2. Lay the flat breads on a baking sheet- spray with cooking spray- Mound the mixture on the flat bread, spreading to the edges. Place in oven- Bake for 3-5 min or until cheese is melted- When it is melted, it's done. (If you leave it in too long, the bread will burn).

3. Put it on a bread board and cut it with a pizza cutter.
Spinach Stuffed Chicken Breasts

 recipe makes 4 servings
1 (10 ounce) package fresh spinach leaves
1/2 cup Greek yogurt
1/2 cup shredded mozzarella cheese
4 cloves garlic, minced
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1/2 tsp ground black pepper
1/2 tsp of garlic powder
1 tsp sea salt


Preheat the oven to 375 degrees F (190 degrees C).
Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in Greek yogurt, mozzarella cheese, pepper, sea salt, and garlic.
Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach mixture. Secure with toothpicks, and arrange in a shallow baking dish. Sprinkle garlic powder on top
Bake uncovered for 35 minutes in the preheated oven
